Crab Enchiladas

Find your love for cooking with passion and HERDEZ® Salsa Casera when making a favorite Mexican restaurant dish: the perfect enchiladas stuffed with crab and served with HERDEZ® Salsa Casera.

 

Ingredients:

  • 3 cups

    water

  • 1 (4-ounce) can

    dried red peppers

  • 1/2 cup

    onion, chopped into ¼-inch cubes

  • 3 tablespoons

    cilantro, chopped

  • 3.5 ounces

    Cheddar cheese, shredded

  • 3.5 ounces

    Jack cheese, shredded

  • 1.5 teaspoon

    salt

  • 2 cloves

    garlic

  • 4 tablespoons

    grapeseed oil

  • 12

    corn tortillas, or flour if desired

  • 1.5 cups

    shredded crab or imitation crab

  • 2 cups

    HERDEZ® Salsa Casera medium 

  • 1/2 cup

    Mexican cream (if not available, sour cream with some heavy cream added may be used)

Serves 4

 

Directions:

  1. Preheat oven to 350°F. 

  2. Heat water on stove at medium temperature, add red peppers. 

  3. Boil about 7-10 minutes or until peppers soften . 

  4. While red peppers soften, chop onion and cilantro and combine. 

  5. Mix two cheeses together in bowl. 

  6. When red peppers soften, transfer to blender. 

  7. Add 2 cups of same boiled water, salt and garlic to blender; blend for 2-3 minutes. 

  8. Using bowl and strainer, strain mixture to remove seeds and remaining skin. 

  9. Add 1 cup HERDEZ® Salsa Casera to mixture and mix well. 

  10. Add grapeseed oil to skillet and heat. 

  11. Soften tortillas in grapeseed oil for 10-20 seconds. 

  12. Set on paper towel until all tortillas are cooked. 

  13. Dip tortillas into red sauce, set on flat surface, add crab and roll. 

  14. Place rolled tortillas into 9x13 pan. 

  15. Use remaining red sauce to cover rolled tortillas. 

  16. Pour ½ cup of remaining HERDEZ® salsa over mixture. 

  17. Sprinkle cheese over salsa and pour remaining ½ cups of HERDEZ® salsa over cheese. 

  18. Bake 25-30 minutes. 

  19. Remove from oven and sprinkle onion and cilantro mixture over cheese. 

  20. Drizzle Mexican cream over mixture.
