The North
Mexico’s North is a land of mountains, deserts, ranches and farmlands. From the dusty roads of Sonora to the farms and colonial towns of Durango, you’ll find Northerners enjoying hearty meals of beef, spicy peppers and salsas served with delicious flour tortillas.
Durango is famous for its Barbacoa, or barbecue. This beef, lamb or pork is slow-cooked in a pit covered with maguey leaves. Among the most heartiest of northern dishes is Caldillo, a beef stew renowned for its perfect combination of flavor and chile spice.
