For Mexicans who profess the Catholic faith, Lent, or la Cuaresma, is one of the most important annual events. The days before are celebrated with parades, music and dancing. But once the 40 days of Lent begin, the party ends and the days of strict observance begin. Many meatless dishes are enjoyed during this season. Among them is Fish Tacos.
