A flauta, or flute, is a rolled up tortilla with filling. Normally fried in oil, this recipe offers a healthier baked option. Just brush each tortilla with olive oil to get that golden crispiness, and you’ve got a treat your whole family will enjoy.

Ingredients:

Filling:

cups
coarsely mashed sweet potatoes, about 2 large cooked sweet potatoes

cloves
garlic, minced

11/2
teaspoons
smoked paprika

teaspoon
onion powder

1/4
teaspoon
cumin

Salt and pepper, to taste.

Flautas:

corn tortillas
Serves 4 - 6
Directions:

Heat oven to 450 degrees.

Combine all filling ingredients in medium-sized bowl and mix well.

Lay tortillas on work surface, place one heaping spoonful into center of each and spread evenly.

Roll tortillas into tight cigars and brush with olive oil.

Place seam side down into greased casserole dish or lasagna pan, in tight even line, filling pan from side to side.

Bake 5 minutes, until golden and crispy.
