Breakfast Tostadas a la Mexicana

Save time without sacrificing flavor! These easy-to-make breakfast tostadas are topped with crumbled queso fresco, fresh cilantro and tangy HERDEZ® Guacamole Salsa for a fresh, zesty flavor that cooks up fast.

  • 1 teaspoon

    olive oil

  • 1/4 cup

    white onion, finely chopped 

  • 3 large

    eggs, beaten

  • 1/4 teaspoon


  • 1/8 teaspoon

    black pepper

  • 1/2 cup

    Roma tomato, chopped

  • 1

    jalapeño, seeds removed and chopped 

  • 1 5.4 ounce

    package HERDEZ™ Instant Refried Beans

  • 4


  • 1/2 cup

    HERDEZ® Guacamole Salsa 

  • 1/4 cup

    queso fresco, crumbled

  • 1 tablespoon

    fresh cilantro, chopped 

  • 2

    radishes, sliced

Serves 4



  1. Heat olive oil in medium skillet over low-medium heat.  Add onions and cook 30 seconds.

  2. Pour in eggs and stir slowly 3 to 4 times.

  3. Season with salt and pepper, add tomato and jalapeño.  

  4. Stir eggs until set. Remove from heat, cover and set aside.

  5. Prepare HERDEZ Instant Refried Beans according to package instructions.

  6. Spread beans between tostadas and top with scrambled eggs.

  7. Drizzle HERDEZ® Guacamole Salsa and sprinkle with queso fresco, cilantro, and radish slices.
