Chicken, Black Bean, Peach Salsa Tostada

  • 8

    of your favorite store bought tostadas

  • 1 1/2 pounds

    store bought rotisserie chicken, skinned and meat shredded

  • 4 ounces

    arugula or your favorite greens

  • 4 ounces

    goat cheese

  • For Peach Salsa:
  • 1 cup

    fresh peach, seeded and diced

  • 1/2 cup

    red onion, diced

  • 1 tablespoon

    serrano chile, diced

  • 1/4 cup

    HERDEZ® Salsa Verde

  • 1/4 teaspoon


  • 1 teaspoon

    kosher salt

  • For Black Beans:
  • 1 (15-ounce) can

    black beans, with juice

  • 2 tablespoons

    extra virgin olive oil

  • 1/2 teaspoon

    kosher salt

  • 1/4 teaspoon

    ground pepper

  • 1/8 teaspoon

    ground cumin

  1. For peach salsa, place all ingredients in small mixing bowl, stir to combine well, cover with plastic wrap and set aside for 20 minutes to allow flavors to combine.

  2. For black beans, place a small sauce pan over medium heat, add olive oil to heat. Next ass black beans with its juices, salt, pepper and cumin, stir and allow to simmer together for 8 minutes. Remove from heat and pour into blender or food processor and blend until smooth. Pour back into sauce pan, cover with lid to keep warm.

  3. To assemble, smother each tostada with a spoonful of creamy black beans, tops with shreds of roasted chicken, followed by a little arugula, then spoonful of peach salsa and finally a little crumble goat cheese. Finish each tostada with a pinch of salt, a drizzle of extra HERDEZ® Salsa Verde if you wish and enjoy!
