Chicken Enchiladas With Guacamole Sauce

  • Oil for frying. 

  • 1 cup

    HERDEZ® Guacamole Salsa

  • 1 cup

    heavy cream

  • 12 (4-inch)

    corn tortillas

  • 24 ounces

    cooked chicken, shredded

  • Toppings: lettuce, tomato, diced onions, Mexican Crema and queso fresco

Serves 4



  1. Add small amount oil to frying pan.

  2. Combine HERDEZ® Guacamole Salsa and heavy cream to sauce pan and bring to boil, mixing continuously.

  3. Fry each tortilla 30 seconds per side, dip into salsa mixture and transfer to plate.

  4. Fill each tortilla with tablespoon chicken, roll up and place in baking dish.

  5. Pour remaining salsa mixture over rolled tortillas and serve immediately with desired toppings.
