Chicken Mole with Nopalitos

  • 1 whole

    chicken, cut into pieces

  • 4 cups


  • 2 tablespoons

    cooking oil

  • 1/2 large

    onion, cut into strips

  • 1/2 pound

    unsweetened baking chocolate

  • 1 (8-ounce) jar

    DOÑA MARÍA® Mole

  • 1 (15-ounce) jar

    DOÑA MARÍA® Nopalitos

  1. In large stockpot, cook chicken in 4 cups of water until cooked through and tender. 

  2. Once tender, shred chicken and discard bones. 

  3. Save broth. 

  4. Using a large saucepan fry onion strips in oil. 

  5. Add chocolate to onion and allow to melt. In large stockpot, begin dissolving mole in ¼ cup of chicken broth.

  6. Add onion and chocolate. 

  7. Simmer all ingredients together and slowly add remaining chicken broth until mole softens. 

  8. Rinse and drain nopalitos. 

  9. Add shredded chicken and nopalitos to mole. 

  10. Bring mixture to gentle boil. Serve immediately.
