Chipotle Chicken Fajitas

The warm, smoky flavor of HERDEZ® Traditional Chipotle Mexican Cooking Sauce adds depth and character to traditional fajitas.


  • 4 tablespoons

    olive oil, divided

  • 1 pound

    boneless, skinless chicken thighs, cut into 1-inch strips 

  • 1 medium

    red onion, sliced thinly

  • 1

    red bell pepper, seeded and sliced into ½-inch strips

  • 1

    yellow bell pepper, seeded and sliced into ½-inch strips

  • 2

    garlic cloves, minced

  • 1 cup

    HERDEZ® Traditional Chipotle Mexican Cooking Sauce

  • 2 teaspoons

    freshly chopped cilantro or oregano

  • 8

    HERDEZ® burrito-size flour tortillas, warmed

  • HERDEZ® Salsa Casera, guacamole and sour cream

Serves 4



  1. Heat 2 tablespoons olive oil in large skillet over medium-high heat.  Add chicken and cook 2 minutes per side or until golden brown on both sides.  Remove chicken to plate and set aside.  

  2. Add remaining 2 tablespoons olive oil to skillet.  Add onion and peppers and cook 5 minutes or until golden and soft, stirring often. Add garlic and cook 1 minute longer.

  3. Return chicken to pan, including any accumulated juices, and add HERDEZ® Traditional Chipotle Mexican Cooking Sauce.  Simmer over medium heat 5 minutes or until sauce is slightly reduced and chicken is cooked through. Stir in cilantro or oregano.  

  4. Serve with warm tortillas, salsa, guacamole and sour cream.
