Chipotle Mac and Cheese

Add a kid-friendly spicy kick to this cheesy classic during the celebration leading up to Día del Niño. Your little ones will be sure to love the melted peppery goodness of this mac and cheese dish. Ingredients:

  • Pinch salt

  • 6 cups

    water

  • 1 (16-ounce) package

    elbow macaroni

  • Cooking spray

  • 2 1/2 cups

    whole milk

  • 1/2 cup

    butter

  • 1/2 cup

    minced onion

  • 4 cloves

    garlic, minced

  • 1 cup

    HERDEZ® Traditional Chipotle Mexican Cooking Sauce

  • 5 tablespoons

    all-purpose flour

  • 1 teaspoon

    paprika

  • Salt and pepper to taste

  • 2 cups

    shredded extra-sharp Cheddar cheese

  • 1 cup

    shredded Monterey Jack cheese

Serves 4-6

 

Directions:

  1. Add salt to 6 cups water and bring to boil over high heat. Stir in macaroni and return to boil. Cook pasta, uncovered and stirring occasionally, until cooked through but still firm, about 8 minutes. Using colander, drain water and set pasta aside.

  2. Heat oven 350°F. Spray 9x13-inch baking dish with cooking spray and place cooked macaroni in dish.  

  3. In saucepan, heat milk in saucepan until hot but not boiling. Melt butter in saucepan and stir in onion, garlic and HERDEZ® Chipotle Mexican Cooking Sauce. Cook 5 minutes or until onions are translucent.  Whisk in flour 1 tablespoon at a time and cook 3 minutes, whisking consistently to avoid burning.  Whisk in hot milk, ½ cup at a time, and stir in paprika, salt and pepper.  Bring mixture to simmer (not boiling) 2 minutes, whisking constantly until thickened.  Whisk in cheeses, about ½ cup at a time, and stir until melted and sauce is thick and smooth.

  4. Pour sauce over macaroni in baking dish. Stir gently to combine. Cover dish with foil and bake 40 minutes or until bubbling and macaroni has absorbed some sauce. Uncover and bake 10 to 15 minutes or until edges turn golden brown.

  5. Optional: Add 1 pound ground beef, ground turkey or chorizo plus a cup of HERDEZTM frozen sweet corn.
