Classic Mexican Rice

Perfect every time. Recreate a classic mexican side dish infused with rich tomato flavors, fresh peppery spices and aromatic garlic and cilantro zest. It’s sure to be a family favorite.


  • 1 cup

    HERDEZ® Salsa Casera

  • 1 small

    white onion, peeled and chopped 

  • 2 cups

    long grain white rice 

  • 1/3 cup

    canola oil 

  • 4

    garlic cloves, minced 

  • 2 medium

    jalapeño peppers, seeded and minced 

  • salt & freshly ground pepper 

  • 2 cups

    chicken broth 

  • juice of one lime 

  • 1/2 cup

    fresh cilantro, minced

Serves 4



  1. Heat oven to 350ºF.

  2. Combine HERDEZ® Salsa Casera and onion in food processor and puree until smooth. 

  3. Place rice in fine mesh strainer and rinse under cold running water until water runs clear.  Drain well.

  4. Heat canola oil in heavy bottomed, oven-safe pan with tight fitting lid over medium heat.  Add rice and fry 5 minutes, stirring often, or until rice is light golden. 

  5. Add garlic and minced jalapeños and sauté, stirring constantly, 1 minute.  Season generously with salt and pepper.  Add broth, lime juice and pureed salsa mixture to pan and stir to combine. Bring mixture to boil then cover the pan.

  6. Transfer pan to oven and bake 30 minutes or until liquid is absorbed and the rice is tender.  Stir well after 15 minutes.

  7. To serve, stir in the cilantro.
