Fast Chicken Lemon Tortilla Soup

This 15-minute meal uses HERDEZTM Yucatan Blend as the base. Lemon juice brightens the flavor of the soup!


  • 2 tablespoons

    olive oil 

  • 1 small

    yellow onion, diced

  • 1 cup

    HERDEZTM Yucatan Blend

  • 1

    garlic clove, minced

  • 1/2 teaspoon

    ground cumin

  • 1/2 teaspoon

    chili powder

  • 4 cups

    chicken broth

  • 1/2 cup

    HERDEZ® Salsa Casera

  • 2 cups

    cooked and shredded chicken 

  • Juice of 1 lemon

  • 1 bag

    HERDEZ® Tortilla Chips

  • 1/2 cup

    crumbled Cotija cheese

  • 1/4 cup

    freshly chopped cilantro

  1. Heat oil in large pot over medium heat. Add onion and cook 5 minutes or until tender and golden.  Add HERDEZTM Yucatan Blend and cook 5 minutes, stirring often.  Add garlic, cumin and chili powder and sauté 1 minute. Add chicken broth and HERDEZ® Salsa Casera and bring mixture to a boil.  Reduce heat to simmer and cook 5 minutes to blend the flavors. Add shredded chicken and lemon juice and cook 3 minutes.

  2. To serve, ladle into bowls and top with crushed HERDEZ® Tortilla Chips, crumbled Cotija cheese and chopped cilantro.
