Guacamole Salsa Chilaquiles

This easy Mexican chilaquiles recipe is full of traditional flavor with a twist—the tortilla chips are fried in tangy, creamy HERDEZ® Guacamole Salsa! It also works great with leftover tortilla chips or even nachos, transforming them into the perfect weekend breakfast.

Ingredients:

  • 1 cup

    HERDEZ® Guacamole Salsa

  • 1 cup

    heavy cream

  • 4 ounces

    tortilla chips

  • 4 large

    eggs

  • 3/4 cup

    crumbled queso fresco

  • 1 small

    onion, diced

Directions:

  1. Combine HERDEZ® Guacamole Salsa and heavy cream in saucepan and mix well. Bring mixture to boil and add chips; cook 1 minute.

  2. In small pan, fry eggs over easy.

  3. Transfer chip mixture to plate, place eggs on top and sprinkle cheese and onion.
