Guajillo Blackberry Cantina Skewers

Juicy steak marinated in blackberry preserves and HERDEZ® Red Guajillo Cooking Sauce paired with onions and grilled are perfect for any summer barbeque.


  • For Marinade:

  • 1 cup

    HERDEZ® Red Guajillo Chile Mexican Cooking Sauce

  • 1/4 cup


  • 1/4 cup

    balsamic vinegar

  • 1/4 cup

    blackberry preserves

  • 2 tablespoons

    vegetable oil

  • 1 teaspoon

    chopped fresh rosemary

  • 3 teaspoons

    kosher salt

  • 1/2 teaspoon


  • 12

    (8-inch) bamboo skewers

  • 2 pounds

    skirt or sirloin steak, cut into 1-inch cubes 

  • 1

    peeled and quartered red onion

  • For Sauce:

  • 1/4 cup

    HERDEZ® Red Guajillo Chile Mexican Cooking Sauce

  • 1/4 cup


  • 1/4 cup

    balsamic vinegar

  • 1 1/2 cups

    fresh or frozen blackberries, thawed

  • 1/2 teaspoon

    kosher salt 

  • Pinch of pepper

  1. In bowl, combine HERDEZ® Red Guajillo Chile Mexican Cooking Sauce, ¼ cup tequila, ¼ cup balsamic vinegar, blackberry preserves, vegetable oil, rosemary, salt and pepper. Add steak to marinade. Cover with plastic wrap and refrigerate 2 to 4 hours.

  2. Soak bamboo skewers in water 20 to 30 minutes.

  3. Heat grill to high. To assemble skewers, add piece of steak to skewer, followed by onion leaf, another piece of steak, followed by onion leaf, one more piece of steak and finishing with onion leaf. Place finished skewer on baking sheet and continue to assemble skewers.

  4. Grill skewers 3 to 4 minutes per side or until golden brown and medium.

  5. For sauce, place all ingredients in medium saucepan and stir to combine. Place over medium heat and allow to simmer 20 minutes. Taste for salt and set aside.

  6. To serve place grilled skewers on serving platter, drizzle with half of the sauce. Serve the remaining sauce on side.
