Herdez™ Queso Refried Bean Gorditas with Cabbage Salad

Rich and creamy queso refried beans paired with a zesty cabbage salad create flavorful gorditas that will keep your family coming back for more.

Ingredients:

  • 1

    package of Herdez™ Queso Refried Beans

  • 2 cups

    corn flour

  • 1 ½ cups

    water

  • 1 ½ cups

    vegetable oil

  • 3 cups

    cabbage shredded

  • 2 cups

    carrots, shredded

  • 1⁄2

    red onion, thinly sliced

  • juice of 1 lemon

  • 2

    Roma tomatoes, seeded and diced

  • 1 (7-ounce)

    can of HERDEZ® Jalapeño Chiles

  • 1 teaspoon

    dried oregano

Serves 12 Gorditas

 

Directions:

  1. Prepare Herdez™ Queso Refried Beans according to package directions.

  2. For Cabbage salad: In medium sized bowl, add cabbage, carrots, onion, lemon juice, tomatoes, oregano, and salt, jalapenos and jalapeno juice. Mix well, cover and chill 30 minutes before serving.

  3. For the Gorditas: Following instructions on corn flour package for Gorditas, add 1 ½ cups water until you form a uniform dough. If it feels dry, add a bit more water. Make small masa balls with your hand and flatten to form little patties (gorditas).  Place a generous tablespoon of refried beans in the middle and carefully fold edges over to cover the beans. Using your hands, flatten dough slightly to make it thinner and into a round shape about 3-4 inches wide.

  4. Heat oil and fry about 3 Gorditas at a time on both sides.

  5. Top each Gordita with a ¼ cup of the Cabbage Salad
