Kale Chicken Enchiladas with HERDEZ® Guacamole Salsa

A scrumptious chicken enchilada recipe with creamy, spicy sauce and authentic Mexican flavor. Sure to give your taste buds a kick!

  • 1 1/2 cups

    HERDEZ® Guacamole Salsa

    chicken breast cooked and shredded

  • 2 cups

    chopped Kale

  • 1/2 cup

    Monterey Jack Cheese

Serves 3



  1. Heat oven to 375°

  2. Place 1 cup HERDEZ® Guacamole Salsa in large bowl and dip tortillas to coat evenly.

  3. Fill with chicken, kale and cheese. Place rolled tortilla in casserole dish and repeat with remaining tortillas.

  4. Pour 1/2 cup HERDEZ® Guacamole Salsa on top and sprinkle with remaining cheese and kale.

  5. Bake 25 minutes, serve and enjoy.
