Mole Burger

Delicious beef patty topped with shredded chicken cooked in DOÑA MARÍA® Mole and crispy onion strings. One of our heartiest recipes!

Ingredients:

  • 2 pounds

    freshly ground chuck 80/20

  • 1 1/2 pounds

    boneless, skinless chicken breast

  • 1/4 cup

    DOÑA MARIA® mole paste

  • 1 teaspoon

    salt

  • 1 teaspoon

    black pepper

  • 1 teaspoon

    granulated garlic

  • 12 slices

    deli Swiss cheese

  • 6 large

    burger buns

  • Shredded green lettuce

  • Onion Rings
  • 1/2

    white onion

  • 1 cup

    buttermilk

  • 1/2 cup

    flour

Serves 6 burgers

 

Directions:

  1. For Onion Rings

    Thinly slice onion. The slices should be thin enough that you should be able to see the knife through the end of the onion where you sliced. Place the onion slices in a shallow dish and pour buttermilk over the onions. Let soak for 10 minutes.

  2. In a bowl add the flour. Dip the soaked onions into flour, tossing to coat.

  3. the hot oil. After 30 to 40 seconds, turn them over once to cook another 30 to 40 seconds. Place the fried onions on a paper towel-lined plate to drain excess oil.

  4. Mole Chicken

    In a medium sauce pan bring 4 cup of water to a boil, enough to cover chicken.

  5. Add chicken breast and let cook for 10 minutes.

  6. Remove chicken. With the end of two forks, brake chicken up until all pieces are completely shredded.

  7. Leave 2 cups of the chicken broth in the saucepan. Save or disregard the rest. Mix ¼ cup mole to the chicken broth and mix under medium heat. Once the sauce starts to simmer add the shredded chicken and let cook for 1 minute. Turn off heat and set aside.

  8. Burger

    In a large bowl, mix ground beef, granulated garlic, salt, and pepper until just combined. Do not overmix, or your patties will be tough.

  9. Divide the meat into six portions and form patties, without pressing too hard. They should be uniform in thickness. Make these right before you cook, so they stay at room temperature.

  10. In a skillet with heat on high add the meat patties, cover with a lid. Cook until the crust that forms on the bottom of the burger releases it from the skillet, about 2 minutes. When burger lifts up easily, flip, add the slices of cheese to each, close lid and cook another 2 to 3 minutes. Remove burgers from pan and place on the plate. Allow to rest for several minutes.

  11. Transfer burger patty to bun, with tong place a heaping amount of mole chicken on top of the patty, add the fried onions strings and shredded lettuce. Serve immediately!
