Mole Meatballs

  • Meatballs
  • 1 pound

    fresh ground turkey breastfresh ground turkey breast

  • 1/4 cup

    white rice

  • 1


  • 1 tablespoon


  • 1/4 tablespoon

    black pepper

  • 2

    garlic cloves, diced small

  • Mole Sauce
  • 4 cups

    chicken broth

  • 1/2 cup

    DOÑA MARIA® mole paste

  • 1

    large zucchini, diced 1 inch

  • 1

    large carrot, diced 1 inch

  • 3

    small red potatoes diced

Serves 4



  1. In a large bowl, with hands mix the ground turkey breast, rice, egg, garlic, salt and pepper.

  2. When completely mixed, shape meat into tablespoon balls and set aside.

  3. In a large saucepan over medium heat, add chicken broth and mole paste, mix well.

  4. Bring to a boil then add the tablespoon size meatballs.

  5. Reduce heat and let simmer for 25 minutes.

  6. Add the diced zucchini, carrots and potatoes and continue to cook for 10 minutes. Serve hot!
