Poached Shrimp with Mint

This poached shrimp with mint dish has a striking heat from the HERDEZ® Guacamole Salsa and jalapeños. Serve it as an appetizer, side or even the main course!

    (medium) shrimp, shell-on

  • 2 teaspoons

    red onion, sliced

    hothouse cucumber, diced

    HERDEZ® Guacamole Salsa, chilled

  1. In stockpot add ½ gallon water, salt, bay leaf, ½ onion and juice of 1 lime (toss lime in pot for extra flavor!) Bring to boil over medium-high heat and simmer 5 minutes.

  2. Reduce heat to medium-low and add shrimp. Simmer uncovered 5 minutes or until shrimp are bright pink and tails curl.

  3. Using slotted spoon, remove shrimp from poaching liquid and chill thoroughly before peeling. Serve with onions, cucumbers, jalapenos, mint, lime wedge and HERDEZ® Guacamole Salsa.
