Queso Fundido with Sautéed Verde Tequila Mushrooms

This heavenly melted cheese appetizer mixed with mushrooms, tequila and HERDEZ® Salsa Verde will be an instant hit at any party!


  • 2 tablespoons

    extra virgin olive oil

  • 1 cup

    chopped sweet onions

  • 1 teaspoon

    kosher salt, divided

  • 1/2 teaspoon

    ground pepper, divided

  • 8 ounces

    sliced mushrooms

  • 1/4 cup


  • 1/4 cup

    HERDEZ® Salsa Verde

  • 2 1/2 cups

    shredded queso Oaxaca cheese

  • 1/2 cup

    shredded queso Cotija cheese

  1. In large skillet over medium-high heat, heat olive oil. Add onions, ¼ teaspoon salt and pinch of pepper. Cook 4 minutes.

  2. Add mushrooms, tequila, HERDEZ® Salsa Verde, ½ teaspoon salt and ¼ teaspoon pepper. Cook 4 minutes longer. Spread mushroom mixture evenly on the bottom of the skillet. Top with shredded cheeses. Broil 3 to 4 minutes or until cheese is melted and golden brown. Remove skillet from heat and serve immediately with warm tortillas or bread. Place extra salsa verde on the side.
