Refried Chorizo Black Beans

Make your carne asadas interesting with a palate-pleasing side dish. This homemade refried beans recipe uses black beans for a lighter take on traditional Mexican refried beans. The flavors go from ordinary to extraordinary when combined with full-bodied chorizo, queso fresco and a light touch of HERDEZ® Salsa Verde.


  • 3 tablespoons

    vegetable oil

  • 1

    corn tortilla, torn in pieces

  • 1 pound

    meaty chorizo such as longaniza

  • 2 (15-ounce) cans

    black beans

  • 1/2 cup

    HERDEZ® Salsa Verde, divided

  • 2 teaspoons

    kosher salt, divided

  • 1/2 teaspoon

    coarse ground pepper

  • 1/2 cup

    favorite crumbled cheese, such as fresco, cotija or feta

  1. Place medium-size sauté pan over medium heat and add oil. When oil is hot, add torn pieces of corn tortilla, Cook 3 to 4 minutes or until golden brown and crisp; remove. Add chorizo without casing and allow to brown 4 minutes, using wooden spoon to break up meat. 

  2. Add black beans and juices, ½ cup HERDEZ® Salsa Verde, crispy corn tortilla pieces, 1 teaspoon salt and pepper. 

  3. Stir to combine, reduce heat to medium low and simmer about 4 to 5 minutes. Using bean or potato masher, mash to desired consistency. 

  4. Adjust salt to taste, remove from heat and let stand 5 minutes. Place beans in serving bowl, top with crumbled cheese, a few drizzles of HERDEZ® Salsa Verde and enjoy!
