Salsa and Vegetable Confetti Rice

Rice glazed with sweet onion and garlic is heightened by the rich tangy zest of HERDEZ® Salsa Casera and HERDEZTM Mixed Vegetables. Fresh tasting and full-of-flavor, this side dish is the perfect accompaniment to beef, pork or chicken.


  • 2 tablespoons

    olive oil 

  • 1 small

    yellow onion, diced

  • 1

    garlic clove, minced

  • 1 teaspoon

    ground cumin

  • 1/2 teaspoon

    dried oregano 

  • 1 1/2 cups

    long grain white rice 

  • 2 cups

    chicken broth 

  • 1/2 cup

    HERDEZ® Salsa Casera

  • 1 (16- ounce) bag

    HERDEZTM Mixed Vegetables 

  • 1/4 cup

    freshly chopped cilantro

  • Juice of one lime

  1. Heat oil in large saucepot over medium heat. Add onion and sauté 5 minutes until softened, stirring often.  Add garlic, cumin and oregano. Sauté 1 minute longer.  Add rice and sauté 3 minutes until or until rice is lightly toasted, stirring constantly.  Add chicken broth and HERDEZ® Salsa Casera and bring mixture to a boil.  Reduce heat to a simmer and cover pot with a lid. Cook rice 10 minutes.

  2. Remove lid and add HERDEZTM Mixed Vegetables. Cover pot again and cook 10 minutes or until rice is tender and liquid is absorbed. 

  3. Remove pot from heat and let stand, covered, 5 minutes.  To serve, stir in chopped cilantro and lime juice and gently fluff the rice with a fork.
