Salsa Verde Mini Quiches

In honor of Día del Niño, make a breakfast recipe that your niños can enjoy over and over again. These mini quiches deliver a fun way for kids to enjoy the tangy flavors of authentic tomatillo sauce. Recipe courtesy of Chef Cody, child chef partner, 2015.

  • Cooking spray

  • 6 large


  • 3 large

    egg yolks

  • 1 1/2 cups

    whole milk

  • 3/4 cup

    HERDEZ® Salsa Verde

  • 1/2 teaspoon


  • 1/2 teaspoon


  • 1/2 cup

    shredded Monterey Jack cheese

  • 1/2 cup

    shredded sharp Cheddar cheese

Serves 8



  1. Heat oven to 350°F.

  2. Spray 48 mini muffin cups or 24 regular muffin cups with non-stick cooking spray. Whisk together eggs, yolks, milk and HERDEZ® Salsa Verde until smooth. Add salt and pepper.

  3. Divide cheese into individual muffin tins and pour egg mixture to ¾ full. Bake 30 minutes or until tops are golden.

  4. Optional: Add grilled ham, breakfast sausage or chorizo to muffin tins before adding egg mixture. Add HERDEZ® corn or flour tortillas to bottom of tins to make a crispy crust. Add shredded potatoes to bottom of tins before adding egg mixture.
