Skirt Steak Fajitas

This Skirt Steak Fajitas recipe is the perfect match for your charcoal grill or that favorite cast iron skillet. Sizzling strips are perfectly marinated with hints of blackberry, tequila and HERDEZ® Roasted Pasilla Chile Cooking Sauce. Top with refreshing guacamole, salsa and your family favorites.

  • 1 cup

    HERDEZ® Roasted Pasilla Chile Cooking Sauce

  • 1/4 cup

    blackberry preserves

  • 1/4 cup


  • 1/4 cup

    balsamic vinegar

  • 2 tablespoons

    vegetable oil

  • 1 teaspoon

    chopped fresh rosemary

  • 3 teaspoons


  • 1/2 teaspoon


  • 2 pounds

    skirt steak, cut into 6-inch pieces

  • 1

    red bell pepper, seeded and cut into strips

  • 1

    yellow bell pepper, seeded and cut into strips

  • 1 large

    spanish onion, thinly sliced

  • Warmed HERDEZ® brand tortillas, guacamole and salsa to serve

Serves 6



  1. In medium bowl, combine HERDEZ® Roasted Pasilla Chile Cooking Sauce, blackberry preserves, tequila, balsamic vinegar, vegetable oil, rosemary, salt and pepper. Whisk everything together until smooth.

  2. Add skirt steaks to marinade and toss to coat. Transfer steaks with marinade to re-sealable plastic bag and seal. Refrigerate 8 to 24 hours to tenderize and develop flavors.

  3. When ready to cook, drain marinade from beef. Heat a cast iron over high heat until smoking. (You can also use a charcoal grill if you so desire!)

  4. You don't need to oil the cast iron, as the steaks are coated in marinade, which has oil.

  5. Grill steaks over medium-high heat, cooking 4 to 5 minutes on each side or until at 130°F.

  6. Transfer cooked steaks to cutting board to rest. While steaks are resting, add olive oil to skillet if needed and cook onion and peppers, stirring occasionally, 8 to 10 minutes or until softened. Season with salt and pepper. Remove skillet from heat.

  7. Thinly slice steak diagonally, against grain, and transfer them back (with juices) to cast iron skillet. Serve hot with warmed tortillas, guacamole, salsa and other toppings of your choice!
