Taquitos de Carne con Papas al Guajillo

Try this fun take on traditional Carne con Papas recipes to celebrate Día del Niño with your children. These Mexican taquitos are filled with tender shredded beef, diced potatoes and a kid-friendly guajillo sauce.   • 1 1/2 pounds

    skirt steak, cubed (pork shoulder may be used instead of beef)

  • 1/3

    medium onion

  • 2

    bay leaves

  • 3 cups

    HERDEZ® Roasted Guajillo Mexican Cooking Sauce

  • 1

    large tomato, chopped

  • 1

    clove garlic, peeled

  • 1/2 teaspoon

    ground cumin

  • 1 teaspoon

    dried Mexican oregano

  • 1 tablespoon

    vegetable oil

  • 1

    large potato, cooked and cut in cubes

  • Salt and pepper, to taste

  • 12

    corn tortillas or 12 small flour tortillas

Serves 6



  1. In large stock pot, cover meat with water. Add onion and 1 bay leaf and cook 1 1/2 hours (or 35 minutes in pressure cooker) until meat is tender and can be shredded easily.

  2. Place 1 cup HERDEZ® Roasted Guajillo Mexican Cooking Sauce, tomato, clove garlic, bay leaf, cumin and oregano in blender and process until smooth. Set aside.

  3. Once meat is tender, remove from pot and shred finely.

  4. Heat oil in skillet over a medium heat, add guajillo sauce from the blender and the rest of the HERDEZ® cooking sauce. Add shredded meat and cooked potatoes, season with salt. Cook 8-10 minutes to allow the flavors to blend.

  5. Warm tortillas and form taquitos by placing filling in the center of each tortilla and folding or rolling. Garnish with lettuce, tomato slices and crumbled cheese.
