Tortas de Camaron

  1. In medium size bowl, whisk egg whites until a meringue forms. 

  2. In small bowl, lightly beat egg yolks then add to egg white meringue and mix slowly. 

  3. Add ground shrimp and continue to mix slowly for about 1 minute.

  4. Over medium flame, heat canola oil in large frying pan. 

  5. Using a ¼-measuring cup, scoop egg-shrimp mixture, drop into oil and fry about 1 minute or until golden brown and puffy. 

  6. Flip to cook other side. 

  7. Once batch is fully cooked, remove from oil with slotted spoon and place on paper towel to drain oil. 

  8. Continue cooking batches of remaining egg-shrimp mixture (yields about 24 tortas).

  9. Place drained tortas in medium size pot and add salsa and drained nopalitos. 

  10. Add 1 cup water and bring to soft boil (add additional water if too thick.) 

  11. Add chopped cilantro and cook for 5 minutes. 

  12. Serve with rice and tortillas.
